Banana Cupcakes

My daughter is five and a half now. Like most her age, she has developed the love to help out in the kitchen, especially when it comes to baking goodies!

This afternoon she donned her small apron to make a batch of mini cupcakes. Boxed cake mixes are loved at our house; the time it saves allows us to spend more time making the finished product look pretty! Today we used a yellow cake mix and added in some pureed bananas. The result was a scrumptious banana cupcake that we chose to top with chocolate icing. One day I will share my favorite icing recipe, which is loads better than the store-bought variety! Until then, add something to an ordinary cake mix to make your family's day extraordinary.
